Recipe (The Secret)

1. Tofu Pressing

Firm tofu is pressed for several hours to remove excess moisture — the critical step that allows the surface to sear properly. Pan-fried until golden and slightly crisp on the outside, while staying silky and tender within.

2. Japchae Crafting

Glass noodles are boiled to a perfect al dente, then wok-tossed in fragrant sesame oil with fresh spinach, mushrooms, and carrots. Each vegetable is seasoned separately before combining — the traditional method that keeps every colour and flavour distinct.

3. Final Glaze

Our homemade teriyaki sauce — balanced between sweet mirin, soy, and a touch of ginger — is brushed generously over the golden tofu while still hot, creating a deep, glossy umami glaze that ties the entire bowl together.

4. Assembly

Japchae and glazed tofu are layered over fluffy steamed rice — a colourful, wholesome bowl that’s as beautiful as it is delicious.
